Chocolate Chip Coconut Muffins Gluten Free – The Best Muffins
Tiny Chocolate Chip Coconut Muffins, gluten free, and served with a couple slices of cheese and it’s the perfect toddler (and mom!) lunch.
Whether you are having friends over for a play date or going to the park (I like taking snacks to the park!), this is an easy thing to have available.
If you have never pulled something out of the oven when friends come over to play…. be prepared to ‘wow’ them! And it a great way to have your house smell inviting!
2 bananas mashed
6 eggs (yes, that says six – yay for good protein)
1/2 cup coconut flour (lots of great fiber)
1/4 cup of honey
1/4 cup of coconut oil (or butter)
1/2 tsp baking powder
1/4 tsp salt
Chocolate chips (optional, I just put a couple on top of each before baking)
350* for 20-25 min
Be careful not to over bake
note: the consistency will be a bit different than you are used to.
